About the role

As Senior Operations Manager, Food & Beverage, you will lead the overall Food & Beverage operations, including restaurants, bars, cafés, kitchens, catering, and event-related services. Reporting to the COO, this is a hands-on leadership role responsible for revenue, budgets, food costs, labour costs, purchasing, inventory, and waste management. You will also drive the development and implementation of SOPs, training, pre-opening and operational readiness, and service standards. In this role, you will develop and support the team, strengthen service quality and operational systems, and help create exceptional guest experiences in Niseko, a destination welcoming guests from around the world.

Main tasks
  • Revenue, budget, cost of sales, labour cost, purchasing, inventory, and waste management for the overall F&B department
  • Overall management of restaurant, bar, café, kitchen, catering, and event service operations
  • Guidance and development of kitchen, front-of-house, café, and bar supervisors, as well as F&B team members
  • Development and maintenance of SOPs, training programmes, operational preparation procedures, and operating standards
  • Leading on-site operations during service hours, peak periods, and events
  • Recruitment, training, shift management, supervision, and evaluation of F&B staff
  • Improvement of service quality, guest satisfaction, team performance, and operational efficiency
  • Management of hygiene, safety, and compliance standards
  • Enhancement of the guest experience in collaboration with other departments
  • Analysis of revenue, costs, staffing, inventory, and operational performance, and proposal of improvements
About you

Required Skills and Experience

  • Minimum of 5 years of management experience in the Food & Beverage field
  • Experience taking overall responsibility for F&B operations at a single outlet or across multiple outlets
  • Proven experience in improving, building, or developing F&B operations
  • Strong understanding of revenue management, budget management, food cost control, labour cost control, purchasing, inventory, and waste management
  • Experience directly leading supervisors and developing and managing multiple operations teams
  • Hands-on operational experience in a restaurant, hotel, resort, or high-volume F&B environment
  • Knowledge and experience related to SOPs, training programmes, service standards, and operational preparation procedures
  • Ability to lead teams on-site during service hours and peak periods
  • Strong guest service, problem-solving, and communication skills
  • Basic PC skills
  • Ability to communicate professionally in English and/or Japanese

Preferred Skills and Experience

  • Experience working in a hotel, luxury resort, or international environment
  • Bilingual skills in English and Japanese
  • Experience managing multinational teams
  • Knowledge of wine, cocktails, café operations, and restaurant service
  • Experience in budget management, cost control, and revenue analysis
  • Experience working in the Niseko area or another tourism destination
  • Experience with new outlet openings, seasonal operations, or operational restructuring
Offer

Salary: JPY 380,000–430,000 per month

*Salary will be determined in accordance with company regulations, taking into consideration experience and skills.

Start Date: Immediate start available, negotiable
