The Taste of Hokkaido Summer

Hokkaido is Japan's larder, and summer is its peak. Sweet corn picked that morning, asparagus that needs nothing but butter, dairy from cows grazing in the valley, seafood from the Sea of Japan just over the hills. Every restaurant in the region — from Michelin-starred to roadside ramen — draws from the same extraordinary pantry.

June – August
Hokkaido's sweet corn is legendary — eaten fresh, grilled, or turned into soup. Asparagus follows close behind. Both arrive at local markets, restaurant menus, and farm stalls throughout summer.

Dairy & Cheese

Peak in Summer
The farms around Niseko produce some of Japan's finest milk, butter, and soft cheese. Find them at farmers markets and on almost every serious restaurant menu in the region.

Seafood

Sea of Japan & Pacific Coast
Otaru — one hour away — is one of Hokkaido's great seafood ports. Uni, scallop, crab, and fresh-caught fish make their way to Niseko's tables daily. Summer is prime season.
