Founded in Tokyo, APÉRO has become a reference point for naturaland biodynamic wines, bringing together a community of wine
lovers and food enthusiasts. Our journey began with a wine shop and wine bar in the heart of Tokyo, where we curated bottles from small, passionate producers and paired them with refined plates celebrating Japanese seasonality. Over the years, APÉRO has built a reputation for elegant simplicity, warm hospitality, and the art of storytelling through wine.
With the opening of APÉRO Niseko @ The Select, we are extending this philosophy to the mountains of Hokkaido. Here, our guests will discover a modern après-ski ritual: a wine bar and restaurant that combines premium Japanese products with French-inspired techniques, alongside an intimate wine shop where rare bottles and everyday treasures are available to enjoy or take home.

- Lead the kitchen and develop menus around Hokkaido seasonal products
- Prepare small plates and signature dishes pairing with fine wines
- Ensure product quality, sourcing, and hygiene standards
- Coordinate with sommelier/manager for pairings and events
- Manage kitchen operations efficiently in a small, high-end setup
- Previous experience in fine dining or bistronomy (French/Japanese fusion a plus)
- Strong creativity with local produce and seafood
- Ability to work in compact, high-demand kitchen setting
- Fluent English; Japanese appreciated
- Salary: from ¥320,000 / month
- Housing allowance: from ¥30,000 / month
